Cmon now... There are three things we don't talk about in polite society -- religion, politics, and BBQ.

We all know that Texas brisket and sausage plates are the best BBQ of all time. I didn't want to bring it up because I dont want you Carolina boys to feel bad.

Texas has a lot of best things, but Carolina has best BBQ.

That is some seriously good kettle corn. Also, at Apogee we have Sonic, Rudy's barbecue, Beth Marie's Ice Cream, Maui Wowi, Metzler's barbecue, Kolache Haven, Smoothie King and Dippin' Dots along with the usual hamburgers, grilled chicken sandwiches, pulled pork sandwiches and bratwursts. Club level has access to a full bar and steak meals from Outback Steakhouse. I know we won't be in the conference after July, but if any of you should ever play us OOC, you'll know what food we offer.

As far as best tailgating food, Cajuns hands down. I was born and raised in Southern Louisiana myself so Cajun food is close to my heart.

After living in NC for 5 years and then moving to Texas after that I can say without a doubt I disagree. Carolina barbecue isn't bad and I can enjoy it but my god Texas barbecue is a meat lover's dream come true. Anybody up for some Mueller's? I need to get back to Texas for some food soon.

damnit. Now I need to light the grill and cook some meat. Steak. Boston butt. Burgers. Bacon. Doesn't matter at this point. Need fire + meat after reading the last few pages.

You need smoke not fire. Smoke, lots and lots of smoke.

Of course you need fire for smoke, sort of. Oh, and you need some pecan wood and a brisket.

That picture is all kinds of wrong. You don't barbecue with charcoal and you sure don't need beer in a mug (bottle and koozie, it's hot outside).

Here is a list of what you need.

Pecan wood (post oak is pretty awesome too)
Brisket (it's a cow, deal with it)
Beer (prefereably from a bottle) or Big Red
Sauce is completely optional but if it's good enough you don't need sauce.

If i'm smoking some pork, yes that's what I need. If I'm grilling a steak I need fire. Lots of fire.

Boston Butt, Apple wood, mustard based crust, Smoke for 8 hours, pulled pork. Works 60% of the time, every time.

I usually go Boston Butt. Soak it in my special brine for >4 hours. Cover it in my special rub. Oven for 8 hours at 175. Grill for 45 mins. Let sit for 20-30 mins. Pull pork with fork and hands. Apply spicy vinegar sauce.

That is how I make BBQ -- the way God intended: The Carolina way.

I gotta say, that sounds pretty freaking delicious. I like a mustard based sauce though, but I've had some good vinegar sauces before as well.

What temp on the grill? Direct or indirect? You wrap it in foil? Devil is in the details!

We have added a fan shop outside the stadium along with the Strutters Hall of Fame. I really have enjoyed the upgrades to the stadium. Tailgating has improved tremendously so all the ULM and Troy fans who played then SWT and now Texas State will notice a big difference from years ago.

Our biggest issue is parking. Tell me about your situation.

UL Cajun Fans
The McNeese fans have told me about your tailgating. I have some great friends over at McNeese from tailgating with them for years. Look forward to traveling to UL and ULM for some great food and drink.

Pizza Hut is absolutely the worst of the fast food pizza joints. Doesn't even hold a candle to Little Caeser's and I always thought they were pretty bad.

Funnel cakes, turkey legs, and the typical stadium food available. Once it is cold hot chocolate is good for the kids.

Clubseats serve beer and wine.

Woodlands BBQ, the one and only thing I will consume in mass quantity in KBS.
