I remember the Freedom Bowl. It was mostly but not exclusively WAC vs. Pac-10, and it had a few good match-ups over the years too: in its final year it pitted 2 teams both in the Top 15 (Arizona and Utah).

It did have a weird TV deal - it was syndicated as opposed to being on ESPN. The Bowl lost its stadium, as you pointed out, but I think it also suffered a bit from being lost in the TV shuffle.

Loved the freedom bowl.
It was PAC vs WAC bowl
But...one year it was Iowa vs Texas
80’s Hayden Fry era and Iowa beat highly favored and highly ranked Texas 55-17
Chuck Long threw deep bombs late in 4th qtr making Texas coach livid lol
Chuck Long and Iowa went to the Rose Bowl the next year
