Most of the people claiming bbq is just one thing have never smoked their own cook. There is a reason that competition bbq is chicken, pork and beef brisket.

Yes, Las Cruces has more than great Mexican food. Rasco's BBQ was pretty awesome last time I was there.

My UDS. The best portable smoker you can make for less than $75. Ribs, pork butt, fatties, turkey, and even salmon are easy to smoke with this. Brisket takes little practice, but you can get great results if you know how to control the heat.

Just basic physics.

I'd probably go with Heirloom on Akers Mill as my favorite in Atlanta. BBQ1 on Lower Roswell, and Community Q in Decatur both get very honorable mentions as well... there really is plenty of good BBQ in Atlanta.

Do you like Williamson Bros. in Marietta?

I haven't been to the original one in Marietta, but I've gone to their other locations. At first I really liked them, but I've come to think less of them as I've learned more about BBQ and have experienced different tastes. I think their sauce is either the top selling sauce in Metro Atlanta or pretty close to it - which I think is pretty cool.

Um...no. You want to keep it moist and there are many techniques, like wrapping a brisket in foil for the last quarter of the cook. But letting it sit in water or some other liquid is unacceptable. Anyone who does that isnt going to be in business very long at all. If you've chosen your brisket correctly (i.e. making sure the point and flat are nearly the same thickness and making sure to have a nice layer of fat on top) then moisture isnt usually a problem provided that you can correctly control the temperature and keep it real low for up to 12 hours. Done correctly the fat should melt over and into the brisket slowly. Its an art which is why I rarely have brisket when I go to a BBQ place outside of TX. I am usually disappointed by people cutting corners.

If we're just talking about ribs, Fat Matt's on Piedmont is the best in Atlanta hands down. I love Community as well. Some of the best Mac and Collards in the city.

Y'all are making me hungry. I prefer to do it myself, whole hog in a pit if you're feeding a crowd or a shoulder in the smoker for a more intimate affair. Splash some vinegar-pepper sauce on, mix and you're done.

When the Shed shut down in Mobile, they stiffed their employees. And then basically laughed about it. Before eating at their remaining location in Ocean Springs, MS, watch the attached news report as to how the owner treats employees that are being fired. Your jaw will drop.

They had a Shed near Lafayette (in Scott) that lasted about two years before closing. I hadn't heard anything bad about the one here. I did eat at the one in Mobile when we went to a softball game a few years back and I thought it was OK (not great, not bad).

Living in Lafayete Louisiana, no one cares about BBQ! We have some of the best food in the country, BBQ is a step below eveything else.

I don't think that no one cares. I just think no one has opened a restaurant in Lafayette that is consistently better than what folks do at home. As stated earlier, I really like Johnson's Boucaniere, which technically is more a smoke house than a BBQ joint.
