Texans learned to love crawfish about 10 years ago and it has driven up the prices considerably for us ever since.

I could point you to several crawfish etouffees that would change your mind about those critters really quickly.

Traditional crawfish bisque (not the soup) with the stuffed "heads" is pretty hard to beat.
