I hope PAC completely cuts ESPN off and we take some form of ESPN deal. Maybe the ESPN pundits will spin the New Big 12 is better than PAC into reality.

For all the reasons you stated the Big 12 would want ESPN to be included in their next deal, why would Pac 12 do the opposite and show ESPN the door (and then be forgotten)?

One possibility: A lot of ESPN's interest in them is late night games, which they don't like and which don't draw as much exposure. CBS might be more accommodating.
