Good games, LOL, I'd watch them.

I saw these matchups but would Ohio St, as the top seed, choose the Fiesta over the Peach? That seems counterintuitive.

Ohio State will take the Fiesta Bowl 95% of the time. The only time they would take the Peach bowl is if they were playing Oregon. Ohio State wouldn't want to give a home game to an SEC school in the Peach Bowl.

They wouldn’t be matched up with a school from the SEC and why would they care if LSU vs Alabama was at the Peach Bowl or not?

Not really. The committee doesn’t do projections. They base their rankings, allegedly, on the information we have up to this point. This activity is intended to make you the sole member of the committee. How would you do it week-to-week based upon the body of work up until this point?

Doing the pairings is meaningless without projections. You don't have the conference champions or the remaining results. Now if you are just saying you are doing your own 1-11 and top G5, that's fine.
