It wouldn't have mattered if UCF beat everyone by 21+. They would have to do that for 4 years straight, then they 'might' get a sniff.

Exactly. I'm not saying UCF deserved it this year (I absolutely believe they deserved it last year). The problem is it is a beauty contest voted on by a small group that values the "P5" more than anything else.
This year there were 4 undefeated teams. When there are that many, some might get left out and UCF was clearly the weakest of the 4. Last year there was no such excuse. UCF won all of their games. There was literally nothing they could have done to get into the playoffs besides go back in time X years and change their schedule to play Oklahoma, Georgia, Ohio State on the road OOC. I genuinely think that is the only way.

The CFP committee would have still found a way to put UCF 5th.
I absolutely believe that UCF deserved to play in the playoff this year, unfortunately we have a sham of a playoff that restricts access to 3% of all FBS teams.

They are absolutely wrong. There is no path for a G5 member that does not depend on utter chaos in at least two P5 conferences.
All 130 FBS members have theoretical access, but you are high if you believe that access is remotely equal. Many would argue that not even all five power conferences have equal access.
There is no "control your own destiny" in the G5.
There are P5 schools that can't even make it to the playoffs running the table. With a softer OOC they will take a 1 loss Bama over an undefeated Wake Forest, till they've shown a consistency over a few years of winning. That's why they need more slots. So the "what if" teams at least get a shot, including at least one G5 champion ranked top 10 or whatever.

I mean UL, ULL, Arkansas State, the Citadel, @Arkansas! Besides the other Sunbelt teams, who could survive such a gauntlet?
Everybody knows its not how good you are, but who you play that determines your team quality. If the LA Rams played in the Sunbelt this year, the CFP would tell them they should have played a harder schedule.
