The obvious one is "Gavin" for GCU. I would say that multiple appearances on SVP's SportCenter would do that.

Duff McKagan from Guns n Roses. He also attended Seattle U's school of business and economics in 2000. He's a big sports fan and is at Seattle U games at least few times a year. He's at UW games too but walked out of an SU/UW game at UW when they were giving it to SU pretty badly a few years ago

Jesse Edinburg the actor is a GCU fan along with Willie Robertson (they made a bobblehead for ol' Willie).

Idk Lon Kruger got his start UTRGV. Always a very good coach. Liked him from his kstate days.
