It's not the mascot, it's the nickname. It really follows a somewhat common naming convention. Sooners, Hoosiers, Hawkeyes, Wolverines, Razorbacks, Blue Hens, Cornhuskers, Buckeyes, Quakers, Beavers, Volunteers, Badgers, and Cowboys all share this convention.

They are already altering them. In my kid's book on the Texas Revolution it focused on Americans wanting to keep slavery. No mention of Santa Anna being a dictator, tearing up the Mexican Constitution of 1824 (one of the flags they flew at the Alamo-Mexican flag with 1824 on it), massacring citizens in Zacatecas. imprisoning Stephen F. Austin for merely petitioning to have their own Mexican state again (combined with Coahila whose capitol was 1000 miles away), or enforcing Catholicism on the residents.

With the West, the focus was on discrimination against Blacks (of whom there were few) and then discrimination against Hispanics and Chinese. Buffalo died off due to habitat destruction. No real mention of the extermination of the Indians or the effort to exterminate the buffalo to drive Indians back to the reservations.
