The "Carolinas" generalization is your first mistake. There are 4 different styles of bbq within the two states. I agree, the South Carolina and western NC versions are garbage.

Please tell me what the four styles of Carolina BBQ are and why the Western NC and SC varieties are bad.

I am not. I did not know their were multiple styles of Carolina BBQ and I want to know more.

I know of three:

Western NC/Lexington - Ketchup based sauce, mostly pulled if I remember correctly
Eastern NC - Vinegar based sauce, mostly chopped
SC - Mustard based sauce

If I have to hazard a guess on the 4th it's likely Raleigh/Piedmont and a melting pot of ENC and WNC. With that said ENC is the true NC style and the best of the bunch. If you have to add ketchup or mustard than you ain't cooking the meat right.

Thanks. So when Applebee's or some chain restaurant is selling Carolina Pulled Pork sandwiches or whatever, it is some their half assed take on WNC BBQ?
