He was tough as nails but he was a piece of the offense not the main piece like Ellison or Mckinnon were and was never a threat to consistently break a long one off with one missed tackle. Jaybo's longest run was 33 yards, most non mobile QB's will luck up and get that. Mckinnon with his feet alone provided more or about offense than Jaybo with his arm and feet combined. Now add in the 500+ yards passing as a bonus.
Jaybo's passing was average and really no better than Ellison he was just asked to throw more because the speed and cutting was not there. We have plenty of faster or quicker QB's that can throw for 50%-56% completion and 100 yards +/- like Jaybo.

Kevin Ellison could run and or throw for 1000 in a season, Mckinnon could run for 1500-2000 with bonus passing, Jaybo never sniffed 1000 yards rushing.

Taylor Lamb's numbers are very average for a QB (he's 8th in passing yards per game, and doesn't even have 50 yards a game rushing), yet no one would say he isn't one of the top QBs in the league.

Obviously what you do on offense with a guy like Jaybo or Lamb at QB is different than what you do with McKinnon or Ellison at QB, but you can make it work either way. All you do is change the weak link in the option from the pass to the QB keep.

BTW, Jaybo Shaw had a 168.6 QB rating in 2011 and had 10 TDs with 3 interceptions. When we passed, we made it count.
