I think it would be interesting to split players by whether they were drafted, with their draft position provided, if drafted.

Who is Valentino Blake? I think you meant Bennett Okotcha.

UTSA also has DT Brian Price (Packers) and DT Ashaad Mabry (Saints).

Which CUSA player in the NFL probably makes the most money with his contract?

I don't know about the rest of the league but for Tech it's Tramon Williams averaging 7mil/yr.

Valentino Blake is listed as CB on the Titan's Roster:
http://www.nfl.com/teams/roster?team=ten
Here is an article on him:

He's from UTEP. I mistakenly had him listed for both UTEP and UTSA. He is removed from UTSA now.

Brian Price is not listed on the current Green Bay Roster:
http://www.nfl.com/teams/roster?team=gb

Ashaad Mabry is not listed on the current New Orleans Roster:

I know the saints signed Mabry to a futures contract. Basically he was not on the final roster but he'll be in training camp. He played in 4 games this season but spent most of the year on the practice squad.

Now that I think about it...Without looking at the other players i'll put my money on TY Hilton being the highest paid from a CUSA school (FIU). He averages just under 11mil/yr....Jamie Collins may challenge him in a couple months.

Nfl.com should be a consistent data source for this. It appears to reflect current rosters. I will be monitoring it for changes and if (or more likely when) I miss something let me know and I'll get it fixed. Except for the few teams that are left in the playoffs it is essentially the offseason for the rest of the league. This could have a bearing on what a team considers their official roster at this time. It will be interesting to see how it changes between now and the start of next season.
