You throw out a couple Spanish words and think you are some kind of expert? Next time you go, get off your american resort, ask the cab driver to bring you where he lives, go eat there. There is a reason why authentic Mexican was turned into tex-mex... So Americans would eat it.

1) I am Hispanic
2) Have worked in many Mexican restaurants
3) I live in Atlanta and 90% of Mexicans here are for the interior of Mexico
4) I know a lot Mexican. Not a handful. A Lot. We eat each others houses. They are immigrants. They cook the food from their region. It bares little to no resemblance to what you have described.
5) Married to a woman from the Texas Rio Grande Valley. So also know more than a little about Tex-Mex food.

And the reason Tex-Mex was created was regionalism. People in Northern Mexico/South Texas cook differently than other regions. The reason Nachos were created was so Americans would eat it.

You made a crazy generalized statement about a huge country. It's not correct. I by the way have never been to a resort. That WAS funny though. :D

We call it the food like grandma made. Salt and very very thin is the key to good cornbread. Spoon it out into the grease and then mash it down in the middle with the back of the spoon.

Like cornbread, and there are plenty of variations to jazz it up . . .

Throw in a can of Mexi-corn . . .

Add a tablespoon of sugar or honey . . . .

Cheddar cheese is always good . . .

Jalapeños and Cheese, awesome . . .

8 oz of cheddar and monterey, 1 finely chopped onion, can of corn, cup of chopped pickled jalapenos all mixed with cornbread mix. Grease pan with butter and heat for two minutes before pouring in the mix. Cook until top is golden brown. Haven't tried honey, but will next time.

Most people in this country wouldn't touch cajun food if we told them what was in it. You decided to get your panties in a knot. I hunt in south texas and we cross all the time, I fish all over mexico including baja... The food sucks and I'm not picky. There is a place in lafayette that claims to be authentic, and it is for the most part accept they spice it up do people around here will eat it. The first time I went to Mexico many years agony was expecting spicy and well seasoned food, I was extremely disappointed. The mexican people that cook it here is fantastic because they adapt to our taste. I'm sure I won't convince you otherwise but I'm pretty sure you lost any food cred when you said nobody outside of louisiana likes our food.

More like nobody outside of Louisiana cooks [or seasons] our food correctly. Even places here who send our food out of state [Hebert's Specialty Meats, etc.] over pepper it for the export market, because outsiders expect Cajun food to be really peppered, when it generally is not.

I agree, our food is well seasoned not peppered... Or shouldn't be peppered. To me spicy and well seasoned is different than peppered.

My wife is a 1990 Troy grad. We are making the trip in November for the Georgia Southern / Troy game. Please list the places we should eat. This will be her first visit back to Troy in 25 years. Crows and Mossy Grove School Restaurant were her two favorite places to eat back in the day. Are they still open?
